Melt-In-Your-Mouth Brown Sugar Cookies #recipe #baking #cookies

Today we finally had a bit of a reprive from the heat, but it's been too windy to do anything but stay in the house.  It's been awhile, so I thought I'd make some cookies. The only problem is that my baking stash of cocoa, nuts and chocolate chips has been depleted and I didn't feel like running to the store (again) so I decided to just use what I had on hand.


Melt-In-Your-Mouth Brown Sugar Cookies

YIELD: About 3 dozen cookies

Ingredients

  • 1 1/2 sticks unsalted butter, softened
  • 1 1/4 cups brown sugar (you can use light or dark or a combination of both)
  • 1 large egg
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 1 teaspoon ground cinnamon

Preparation

Preheat the oven to 375°F.  Make sure the oven rack is in the middle of the oven.
Mix together butter and brown sugar using a stand mixer, hand mixer or (if you're strong) by hand, until light and fluffy.
Add in the rest of the ingredients and mix until they are well combined.  (I like to add the flour first, then put everything else in on top, for some reason everything just mixes up better.)
Roll into balls using about a teaspoonful of dough and place on an ungreased cookie sheet ( or line sheet with parchment paper, it will make your life much easier!)  about 2 inches apart and bake for 8 minutes.  Let cool on sheet for about two minutes for chewy cookies. If you want hard cookies, bake for 9 minutes and let cool completely on the cookie sheet.
