Cock-a-Leekie Soup Recipe

This is my version of the simple Scottish soup.  Great on a cold day or when you are sick!

Ingredients:
  • 1 cup of cut up chicken meat dark meat preferably 
  • carrot, peeled and sliced
  • 1 sticks of celery, diced
  • 1 large leek cleaned well and sliced into 1 inch pieces
  • 5 cups of chicken stock or bone broth (if you have it)
  • salt and pepper
  • 1 cup of sliced potatoes or more if you would like a heartier soup
  • 1 tablespoon of butter
Brow chicken in butter at the bottom of your soup pot, then pour in stock. Toss everything else into a pot and cook until veggies are tender about 30 mins.  The longer it cooks the better it tastes, I like to simmer for about 40 minutes, or cook it in the crock pot. Season to taste with salt and pepper.
